3 cups all purpose flour
½ cup brown sugar
½ cup white sugar
1 tsp baking powder
½ tsp salt
1 tsp all spice powder
1 tsp cinnamon powder
½ cup dry cranberries
½ cup raisins
2 tsp vanilla extract
1 large egg
3 tbsp unsalted butter
¾ cups milk
How to make it:
Preheat the oven at 350 degrees F.
In a large mixing bowl, add the flour, salt, baking powder, all spice powder and cinnamon powder. Mix them together.
Then add and mix in the butter until it is well incorporated with the flour.
Add the brown sugar, white sugar, dried cranberries and raisins then mix well.
Make a well in the middle and add all the wet ingredients. Which are the milk, egg and vanilla then mix very well.
At this point the dough will be very sticky, stretchy and a bit tough to mix but that’s OK because, that is what you want. Mix for about a minute or so.
Using your hand, scoop about 3 tablespoons size onto a lightly greased baking pan. Make sure they are not touching each other.
Tip: To help reduce the dough from sticking to your hand, dip your hand in milk or water. This helps a lot when scooping the raw dough onto the baking pan.
Put them in the oven and turn the heat down to 325 degrees F. Bake for 25 to 30 minutes.
Take them out after 30 minutes, allow to cool if you help it and enjoy!
