Ghanaian Rice Water Recipe

1 ½ cups rice

½ tsp salt

4 cups water

Milk (preferred amount)

Sugar (preferred amount)

How to make it: 

In a medium size bowl, wash the rice until the water runs clear. About 3 times. 

Soak the rice overnight. If in a rush, you can soak the rice for 30 minutes to an hour. But for best result, it is better soaked overnight. 

Next morning, strain the water that was used to soak the rice out. Then transfer the rice into a medium size pot.

Add 4 cups of water and salt , then cook on a medium to low heat until the rice is extra soft (like really soft and mushy). This usually takes about 12 to 15 minutes. Make sure to stir every 5  minutes.  

After 15 minutes, turn the heat off. Allow to cool down a bit if you can. Serve with your preferred amount of milk and sugar. 

Be extra careful as rice water tends to be very hot right off the stove. So let it cool for at least 5-10 minutes before eating.

Tip: I like to eat my rice water right of the stove, I just cannot wait. To help cool the rice water down quicker, leave the milk in the refrigerator or in the freezer before you start cooking. The cold milk will help cool down the rice water/rice pudding faster!.
