Ingredients
½ – 1 full size African yam
1-2 tbsp salt
2 cups vegetable oil
How to make it:
First heat up the oil on a medium high heat.
While the oil is heating up, peel the yam and cut into small diagonal shapes. You can also cut it in any shape you would like.
Tip: While peeling the yam, make sure to leave the already cut ones in water because African yams tend to brown on the outside fairly quick when air touches it. So, leaving the yam in water will prevent the peeled yams from turning brown.
Wash the peeled yams and add 1-2 tablespoons of salt. Soak the yams in the salt water for about 10-15 minutes.
Fry the yams in the heated oil for 5-8 minutes.
Take the yams out of the oil and rest them on a dry paper towel to absorb any excess oil.
Enjoy with red pepper sauce, shito (a black pepper sauce) and fried fish.
