Ingredients:
1 can whole tomatoes (28 oz) or 3 cups pureed
½ green pepper
1 medium size onion
2 – 3 habanero peppers
1 large onion (diced)
1 bay leaf
½ baked/smoked mackerel fish
1 cup cooking oil
4 eggs
Salt to taste
How to make it:
First, heat the oil in a pot on a medium heat. lice 1 large onion and add to the hot oil. Fry until the edges of the onions start browning.
Blend the tomatoes, green pepper, hot peppers and 1 medium size onion into a puree then add to the frying onions.
Allow it to cook until most of the water evaporates or until the oil starts to settle on the top. This should take about 20 minutes.
Add bay leaf and salt to taste. Stir everything together and cook for 3 minutes.
Add smoked or baked mackerel.
Now, crack 4 eggs and whisk with a fork. Pour the eggs in the pot. Do NOT stir. Cover and allow the egg to cook for 3 to 5 minutes.
Take the cover off and stir. Break the eggs into chunks as you stir.
Enjoy with white rice, boiled yams, boiled or fried plantains, bread. The possibilities are endless!
