Ingredients
For the fish:
1-2 medium to large size red snapper
1 tbsp lime juice
1 tsp salt
1 tsp garlic powder
1 tsp paprika
1 tsp onion powder
1tsp black pepper
2 cups oil (for frying)
For the veggies:
1 small size fresh onion (sliced)
½ green bell pepper (sliced)
½ red bell pepper (sliced)
½ yellow bell pepper (sliced)
2-3 cloves garlic (chopped)
2 tbsp vegetable oil
1 tsp chili pepper
1 tsp black pepper
½ tsp salt
How to prepare it:
Clean the fish by cutting the stomach and take everything out. Rinse the stomach with fresh water. Cut all the fins and the tail. Make 3 to 4 deep cuts on both sides of the fish. Do not cut all the way through when making these cuts.
Place the fish in a large bowl and pat dry with a paper towel.
Now season the fish with salt, garlic powder, paprika, onion powder and black pepper. Make sure to tuck some of the spices between the deep cuts and the belly of the fish.
Cover with a plastic wrap and allow this to marinade for at least 30 minutes.
On a medium heat, heat 3 to 4 cups of oil then fry the fish until golden brown. This should take about 5-8 minutes on each side depending on the size of the fish.
After the fish is nicely fried, take it out and set it on the side.
Place a clean frying pan on a medium heat then add 2 tablespoons of sunflower oil. Add sliced onions and saute for 1 minutes. Add the chopped garlic and all the peppers (green,red,and yellow bell peppers) and stir.
Saute for 2 minutes then add 2/4 cups of water, ½ black pepper, ½ chili pepper, salt to taste and stir well. Let this simmer for a minutes.
Then, add the fried red snapper to the sauteed peppers and onions. Using a spoon, scoop some of the sauce and bast the fish to make sure it absorbs the sauce really good.
Turn the heat off, let it cool a bit and enjoy.
