Angwamo is one of the most popular dishes in Ghana. It is cost effective, delicious and very easy to prepare. Enjoy with fried eggs, sardines, a red pepper sauce (which is made with blended fresh tomatoes, fresh hot peppers, onions and salt) and shito on the side.
Ingredients:
2 cups rice
¼ cup vegetable oil
½ medium size onion (diced)
3 ½ cups water
2 tsp salt
How to make it:
In a pot, heat the oil on a medium heat. Dice the onions and add to the hot oil. Fry the onions until nicely browned.
Wash the rice until the water runs clear then add to the fried onions and stir.
Fry the rice with the onions for 3 to 5 minutes. Do not add water yet.
After 3 to 5 minutes, add 3 ½ cups of water, salt and stir. Cover the pot and let the rice cook for 5 to 8 minutes.
Using a fork, fluff the rice, turn the heat down to medium low, cover the rice and allow it to cook for 5 minutes.
After 5 minutes, Fluff the rice again using a fork. At this point, cover the rice with a paper towel to trap the steam. Cook again for 5 minutes and the rice is ready.
