Ingredients:
2 cups shredded coconut
1 ½ cups sugar
½ cup dried cranberries
½ cup raisins
½ cup sliced almonds
½ dried dates (chopped)
How to make it:
First, grate the coconut meat into shreds. Using a paper towel, pressed down on the shredded coconut to absorb some of the water it naturally has.
Tip: You can use already shredded coconut from the store. Just make sure to get the unsweetened ones.

In a medium size bowl, add 1 cup of sugar and slowly melt on a medium heat. This should take about 3 to 5 minutes to melt depending on the type of sugar.

After the sugar is melted or caramelized, add the shredded coconut, raisins, dried cranberries, dried dates and sliced almonds. You can add any dried fruits or nuts you prefer.

Turn the heat to low heat and stir everything together to make sure everything is well coated with the caramelized sugar.
Transfer to a clean flat surface, spread it out and allow to cool. Or until your hands can handle the temperature of the candy.

Take about a tablespoon full at a time, then mold them in your hands into round shapes and enjoy.
