Ghanaian Suya

Ingredients:

2 lb goat meat 

½ medium size onion 

4 in. Fresh ginger root 

4-5 cloves garlic 

1 tsp rosemary 

1 tsp anise seeds 

1 tbsp salt

3-4 pieces of star anise 

Suya seasoning/spice:

½ peanut powder 

2 tsp hot pepper powder 

1 tsp paprika 

1 tsp nutmeg 

1 tsp cloves powder 

1 tsp garlic powder 

1 tsp onion powder 

How to make it:

First, blend the onion, ginger root, garlic, rosemary and anise seeds into a puree and sit it on the side. 

Then, clean and cut the goat meat into bite sizes and place them in a clean cooking pot. 

Add salt, the pureed onion and ginger mix and star anise. Stir everything to make sure every goat meat is well coated. Cover and allow this to cook for 20-25 minutes. 

While the goat meat is cooking, let’s work on the suya or spice. 

In a small bowl, add the peanuts powder, paprika, nutmeg, cloves powder, garlic powder and onion powder and mix and set it on the side.

After 25 minutes, take out the goat meat and spread them on a baking pan. 

Sprinkle about a tablespoon of the suya seasoning on the meat and toss everything together. Making sure every goat meat is well coated with the spice. 

Place it in the oven and bake at 400 degrees Fahrenheit for 10 minutes to get a crispy looking kebab. 

Take the kebab or suya out of the oven and let it cool.
