Okra Stew With Goat Meat

Okra stew is a very popular dish in the Western part of Africa. Add any meat or vegetable to make it your own. In this recipe, I will show you how I hide the okra in the stew so my picky eaters does not detect it.   

Ingredients: 

1 Lb Geat Meat

2 Cups Okra (fresh or frozen)

1 Tsp Baking Soda 

1/2 Smoked Mackerel (broken up) 

1 Medium Onion (blended)

1 Large Onion (slized)

2 Tbsp Ginger

1 Tsp Whole Anise Seeds

½ Cup oil 

2 Cups Tomato Puree 

1 Habanero Pepper (optional for kid)

1 Tbsp Adobo Seasoning Powder

1 Bay Leaf 

Start by Blending the onions, ginger and anise seeds together, then set on the side.

Wash the meat and add the blended mixture, adobo seasoning powder, bay leaf and 2 cups of water.

Let it cook on medium heat for about 15 to 20 minutes. If you prefer a softer meat, just add more water (about 1 more cup) and let it cook for more time, about 30 minutes. Make sure to stir every 5 to 7 minutes.

While the meat is cooking, heat up the oil in a pan and add the sliced onions.

Let the onions fry until the edges are golden brown, then add the pureed tomatoes. Let this cook for about 20 minutes. Remember to stir every 3 minutes.

While the stew is cooking, prep the okra. Clean and wash the okra.

Here is how I hide the okra and vegetables (that is if you choose to add any vegetables) in the stew for the kids. So I blend the okra. Vegetables like broccoli blend really well with okra.

Add baking soda and mix well. Let it cook for 5 minutes.  

Now, back to the stew. After 20 minutes, add the mackerel, goat meat together with the broth and let it simmer for another 10 minutes. 

10 minutes later

Add the okra and stir everything together. Turn the heat off after 2 minutes.
