Oven Baked BBQ Chicken

Ingredients:

1 Whole Chicken  

3 Pieces Green Onion/Scallions

3 Tbsp Olive Oil

1 Tbsp Onion Powder

1 Tbsp Garlic Powder

1 Tbsp Dry Thyme

1 Tsp paprika

Fresh Thyme (optional)

1 Tbsp Adobo Seasoning powder

½  Tsp Salt

1 Cup BBQ Sauce

1 Tsp Whole Anise Seeds 

How to make it:

First, blend the green onions with the olive oil. Remember , do NOT blend this with water. Use the olive oil to blend the green onions.

Mix in the onion powder, garlic powder, dry thyme, adobo seasoning powder and salt. Set this on the side.

Preheat the oven to 350 degrees F

Now, turn the chicken over and cut the back/spine out. 

Wash the chicken and pat dry with a paper towel.

In an iron skillet or any kind of baking pan you may have, place the chicken and massage the blended mixture on the chicken. Do not be afraid to shove some of the seasoning under the skin of the chicken. Tuck the wings under the chicken and flip the legs.

Add the fresh thyme and bake for 1 hour.

While the chicken is baking, mix the BBQ sauce with the whole anise seeds and set on the side.

After 1 hour, take the chicken out and baste it with the BBQ sauce mixture.

Place it back in the oven and bake for another 20 minutes.

Take the chicken out and allow it to rest for about to 15 minutes before serving.
